Don't worry...we only drank iced tea!

It's been a wonderful Sunday here in Central Texas. While it started out a bit chilly, the sun filled sky quickly warmed things up and made for a beautiful afternoon. The sort of afternoon which was perfect for sitting outside and enjoying the company of good friends. Once a month our life group gets together to have a potluck lunch, and today was our day to gather together to enjoy some delicious food and company. There was quite the selection of tasty dishes ensuring none of us would go hungry for the afternoon (Baptists may not drink, but we definitely eat...Lol), and I can assure you neither the Hubs nor I were hungry after lunch! We enjoyed delicious salads, fresh fruits and veggies, grilled hot dogs, an extremely tasty chorizo quiche made by the Hubs, and many other yummy dishes, but the dish I was most intrigued by was something called a "mock apple pie". Today was the first time I had ever heard of such a thing...apparently it is an apple pie made with Ritz crackers and not a single apple, what?!?! I have to admit, when I first heard we would be having one I was extremely skeptical...how on earth would a pie with not a single apple in it taste like an apple pie?!?! I have to honest...it was the best slice of apple pie I think I have ever had! I have absolutely no idea how one would create an apple pie without apples, but it sure tasted like an apple pie. Once we had finished our lunch it was time to adjourn to the back patio to enjoy the gorgeous weather and some good conversation. Spending the day with such good friends made it a truly wonderful day, making me especially happy. Hopefully you too will be able to spend the day enjoying a tasty meal and the wonderful company of close friends.
